Once the haven of Fort Lauderdale spring break shenanigans, Shooters Waterfront has updated itself to a modern and sophisticated establishment that’s created its own house brand of beer with Biscayne Bay Brewing Company. This coming Friday, they’ll be hosting their partner brewery for a five course beer paired dinner.
The relationship began with the creation of Shooters Ale, a red ale full of American 2-Row malt and Best Red X, a unique red-hued malt from Germany that offers full-bodied flavor and an “attractive, unique color coupled with easy handling in the brewery,” according to BestMalz, creator and supplier of the grain. It’s also packed full of a single hop: Cascade.
“After six weeks of talking with local breweries, we decided on the beer,” Shooters Waterfront’s Peter Lopez told me in an interview for New Times last year. “It’s approachable with the food we’re serving. The amber ale is a little darker… It looks nice. The hops we use give it some floral character without big bitterness. We always wanted to do something crafty, and we didn’t want to do a porter.”
On May 26 beginning at 7:30 p.m., the restaurant will host the brewery’s beers set to dishes from chef Brian Cornelius.
The courses are as follows:
Starter – Seared scallop, lemon thyme arancini, sorrel nage, pear caviar; paired with Kapitan Kolsch
1st Course – Fried green tomato caprese salad, arugula walnut pesto, vincotto; paired with Miami Pale Ale
2nd Course – Cherrywood smoked lamb, farro risotto, exotic mushrooms, pomegranate demi; paired with Shooters Ale
3rd Course – Duck confit tamale, mole negro, grilled spring onions; paired with El Roble – Barrel Aged Scotch Ale
Dessert – Chocolate cake roulade, coffee buttercream, white chocolate ganash; paired with La Colada Coffee Porter
